Steps Towards Ecological Responsibility

Like all of our consumptive choices, the food we eat leaves an imprint on our world. There is a story behind every bite we take. For that reason, our aim is to offer food we feel good about serving, so that you can feel good about enjoying it.

Cleaning up after ourselves
Having recognized waste as the most significant contributor to our carbon footprint, we have begun a race towards zero-waste. Specifically, we are:
  • Composting 100% of remaining food waste.
  • Encouraging the use of dish service rental primarily, and secondarily compostable or recyclable plates, cups, cutlery, napkins and take-away containers.
  • Re-configuring our purchasing and operating practices according to a 5-fold hierarchy, aiming towards less initial waste
  • In addition to recycling plastics of type 1, 2, 4, & 5 with the City of Vancouver, partnering with recycling services to divert plastics types 3, 6 & 7 from the landfill, as well as other non-labelled soft plastics

Not all food is created equal. Some foods require more energy and water as they grow, and thus have a bigger impact on the land, aquifers, and atmosphere. For this reason, we're looking to shift our menu to include and highlight low-foodprint alternatives that are equally delicious and nutritious.
